Frozen Strawberries for Garnish

Whole strawberries may be frozen with caps on or off, spread out on a cookie sheet. Once frozen, place berries in a freezer container for storage. Use before completely defrosted. Whole berries frozen with no sugar do not retain the same quality as when sweetened and sliced.

Freezing Whole Strawberries

Use only firm, ripe berries and freeze promptly after picking. Sort, wash in cold water, agitate gently to chill and wash. Drain and remove caps, then follow these steps:
Prepare syrup ahead by bringing 3-4 Cups sugar per quart of water to a full, rolling boil. Cool to refrigerator temperature.
